Cheesy Mashed Potatoes

In heavy pan place 7-8 cups potatoes (peeled, cubed) and 6-8 cloves garlic (peeled). Add enough water to cover potatoes, bring to boil then cover pan and reduce head to medium-low and simmer for 20 minutes.
In mixing bowl add…
- drained potatoes
- 1/2 cup milk
- 1/4 cup parmesan cheese
- 1/4 cup cheddar cheese (sharp preferred)
- 1/4 cup Queso asadero (Mexican melting cheese)
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Use potato masher or mixer to beat until desired consistency (smooth).
