Chicken ala Romana

Combine in heavy skillet over medium-low heat. Heat until brown.

  • 2 tablespoons unsalted butter 
  • 2 tablespoons olive oil 
  • 1 tablespoon bacon grease (or a strip have bacon / salt pork that has been diced)
  • 1 large onion diced 

Add and cook 15 minutes over medium heat

  • 1.5 - 2 pounds skinless split chicken breasts (bone in). 

Add and cook 5 minutes more… 

  • 1 crumbled bay leaf 

Chop together and add to pan, cooking 5 more minutes… 

  • 1/2 teaspoon fresh rosemary 
  • 1 large garlic clove (smashed)

Add, cover and cook for 10 minutes… 

  • 1/2 cup dry white wine 
  • pinch of black pepper 
  • pinch of crushed red pepper 

Add, cover and cook for 5 minutes over high heat

  • 1/2 cup boiling water
  • pinch of salt 

Uncover, reduce heat to medium-high and cook 10 more minutes. Serve over pasta with white sauce.
