Chicken ala Romana

Combine in heavy skillet over medium-low heat. Heat until brown.
- 2 tablespoons unsalted butter
- 2 tablespoons olive oil
- 1 tablespoon bacon grease (or a strip have bacon / salt pork that has been diced)
- 1 large onion diced
Add and cook 15 minutes over medium heat…
- 1.5 - 2 pounds skinless split chicken breasts (bone in).
Add and cook 5 minutes more…
- 1 crumbled bay leaf
Chop together and add to pan, cooking 5 more minutes…
- 1/2 teaspoon fresh rosemary
- 1 large garlic clove (smashed)
Add, cover and cook for 10 minutes…
- 1/2 cup dry white wine
- pinch of black pepper
- pinch of crushed red pepper
Add, cover and cook for 5 minutes over high heat…
- 1/2 cup boiling water
- pinch of salt
Uncover, reduce heat to medium-high and cook 10 more minutes. Serve over pasta with white sauce.
