Heat oven to 400 degrees.
Sift…
- 1/4 cup all-purpose flour
- 1 3/4 cornmeal
- 1/4 sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 3/4 teaspoon salt
In a separate bowl, beat…
- 1 large egg
- 1 1/2 cups buttermilk (or 1 1/2 cups milk + 5 teaspoons vinegar)
Add dry ingredients to milk/egg mixture.
Pour 4 tablespoons vegetable (corn) oil in cast iron skillet and sprinkle 2 tablespoons corn meal. Heat skillet in the oven for about 4-5 minutes then pour hot oil in corn-bread batter.
Stir then pour back into skillet.
Bake for 25-30 minutes and until slightly brown (golden) and knife comes out clean.
