Gnocchi with Vodka Sauce

Prepare 1 pound package of regular-sized gnocchi, prepared according to package instructions.
Over medium heat, in non-stick skillet, melt 1 stick (or 8 tablespoons) unsalted butter. Once melted, cook for 3-4 minutes. Pour into small bowl for later.
In the same skillet and on medium heat, cook (shake pan every minute or so) for 5 minutes…
- 1 teaspoon brown butter (from earlier)
- 1 medium red onion (chopped - squares approximately 1/2”)
Add and cook another 3-5 minutes…
- 2 cups “Baby Bella” mushrooms (thickly slicked)
Smash 2-3 cloves of garlic and chop with enough kale (stems removed) to make 1 cup; add to skillet and toss; cook for 1-2 minutes until kale is bright green.
Add…
- _1/4 teaspoon crushed red pepper or cayenne pepper (optional) _
- 3-4 tablespoons vodka
- 1/3 - 1/2 cup heavy cream (or half-n-half)
- remaining brown butter (from earlier)
- salt & pepper to taste
Bring to simmer and cook for 3-4 minutes, stirring occasionally. Should reduce slightly. Serve topped with grated Parmesan cheese.
