For those time you can’t fire up the smoker!

Combine the following in a small bowl:

  • 3 teaspoons black pepper
  • 1 1/2 teaspoons paprika
  • 1 1/2  teaspoon garlic powder
  • 1 teaspoon cayenne pepper
  • 1 teaspoon thyme
  • 1/2 teaspoon salt

Rub mixture evenly over a 5 pound boneless pork butt.

Place meat in a 6-quart slow cooker and add 1 cup water.

Cover and cook on low for 6-8 hours or on high for 4-5 hours.

Remove pork from cooker and allow to rest on platter for 15 minutes then pull, slice, or chop to serve. I serve on buns with my cole slaw.
