Preheat oven to 350 degrees.

- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 teaspoon lime zest
- 2 tablespoons lime juice
- 2 tablespoons unsalted butter (melted then cooled)
- 1 tablespoon vegetable oil
- 1 teaspoon sugar
Combine with 1 cup rice (uncooked).

- 1 can black beans (drained)
- 2 roma tomatoes (chopped)
- 4 green onions (chopped)
- 1/4 cup cilantro (chopped)
Place in baking dish (size of bread loaf pan), cover with foil and bake for 1 hour.
