Bring to boil…

  • 1 cup water
  • 6 cups chopped tomatoes
  • 1/2 cups pickled jalapeños (include some vinegar from the jar)

Add…

  • 1 teaspoon oregano
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Simmer for 30 minutes.

Place sauce in blender and add…

  • 1/4 - 1/2 cup chopped red onion
  • 1/4 - 1/2 cup cilantro 
  • juice of one lime or orange 

Blend until desired consistency.  Then add…

  • 2 diced green onions

Refrigerate for at least 2 hours before serving.
